Vegan Loco Moco

From @veganhomecookings (Instagram) A classic Hawaiian dish, Loco Moco consists of steamed rice topped with juicy hamburger steak, fried egg and smothered in a flavorful mushroom gravy.

🔸Homemade Mushroom Gravy


✔️6-8 medium size cremini mushrooms

✔️1TBS extra virgin olive oil

✔️Dry herbs (basil, thyme, and oregano)

✔️1/4cup white wine

✔️2TBS flour (or corn flour for GF)

✔️1.5TBS nutritional yeast

✔️1tsp soy sauce (tamari for GF)

✔️1/2tsp Dijon mustard

✔️2cup vegetable broth

✔️Salt and pepper to taste


1 In a large skillet, heat olive oil over medium-high heat

2 Sauté sliced mushrooms

3 Sprinkle herbs, pour in 1/4 cup white wine and cook for 3 minutes

4 Sprinkle mushrooms with flour, mix well, pour vegetable broth, add soy sauce, Dijon mustard, and nutritional yeast, bring to a boil.

5 Whisk over medium-high heat for a couple of minutes, until the gravy thickens. reduce heat to low-medium heat, season with salt, pepper
