✔️3 oz pack of Next Short Rib
✔️1TBS lime juice
✔️1TBS orange juice
✔️1/2tsp liquid amino (Or Soy Sauce)
✔️2TBS chopped cilantro
✔️2 sliced jalapeños (finely chopped)
✔️Pinch of cumin, chili powder, and black pepper
✔️Red, Yellow, Green bell peppers
✔️8-10 brown mushrooms
✔️Sea salt and black pepper
🔸Additional Bowl Ingredients
✔️Coconut Cilantro Lime Rice
1 - Whisk all of the marinade ingredients together in a bowl. Marinade the Next Short Rib for 30 minutes
2 - In a frying pan, heat olive oil, sauté marinated Next Short Rib, and cook until nicely charred.
3 - Preheat the oven to 210℃ (410°F). Toss the roasted veggie ingredients together in a bowl. Spread the vegetables out on a parchment paper-lined baking sheet.
4 - Bake for 20 minutes until the peppers and mushrooms are tender and starting to get brown.
5 - Serve with carne asada, coconut cilantro lime rice, and other toppings.

Add coconut cream, lime juice, chopped cilantro, and a pinch of salt to the cooked rice, and mix.
